Have you ever heard this phrase before? It’s one phrase that I love because it reminds me that no matter how many snow storms we have at the beginning of March, by the end of the month, spring has come. The first day of spring is March 20th this year, and I couldn’t be more excited. I love winter and all, but mostly to look at if I’m being honest – I am not one for cold weather, but I love snowflakes.
Anyways … spring has got to be one of my all time favourite seasons as it signals the passing of winter and brings with it the warmth of the sun and the beginning of new life and colour to the world around us. But as we celebrate the return of spring, here are a couple of ideas on how to spend it this weekend with your family:
Do your groceries at your local farmers market
Go spend some time at the park near your house
Take an evening walk around your neighbourhood
What am I going to do? My favourite way to celebrate spring is to make some spring inspired sugar cookies. I have a tulip and a maple leaf cookie cutter that I like to use (among some animals). Here is the recipe that I love.
Sugar Cookies
Dough must chill before baking
- 1 c. butter
- 2/3 c. sugar
- 1 egg
- 1 tsp. vanilla
- ½ tsp. salt
- 2 ½ c. flour
Cream together butter and sugar. Add in remaining ingredients until they are well blended. Chill dough for 3-4 hours before rolling. Preheat oven to 350. Roll out and cut. Bake about 8-10 min. or until barely coloured.
Frosting
- ¾ c. powdered sugar
- 1 tbsp. butter
- 1 tbsp milk
- ½ tsp. vanilla
- ¼ tsp. lemon juice
Melt butter, combine all ingredients and beat until smooth. Add food colouring if desired.
