This recipe is by far one of our favourite recipes for the summer! It is light, refreshing, delicious and healthy! A friend of mine gave this to me last summer for lunch one day and I thought it was the BEST lunch ever!! It was so nice to change things up!
Here’s what you will need:
- Bread (we don’t normally eat white, but this sandwich on a fresh loaf of white bread is hands down the best!).
- Tomato
- Mozzarella Cheese (fresh is best!)
- Pesto sauce (I have only tried the Classico one but I’m sure there are other brands out there!)
- Butter
It’s pretty basic like a grilled cheese sandwich, but a bit of a fancy twist 🙂
Butter the bread on one side and then on the other side, spread the pesto sauce and grill it like grilled cheese.
Next slice the mozzarella cheese and tomato and place it on top. Butter the other side of the bread and flip it over to brown both sides and allow the mozzarella to melt slightly.
Our favourite thing to pair it with is fresh vegetables or a kale salad…with some lemonade, this meal screams summer! 🙂 Enjoy!!
