Happy Easter!!
This weekend many people will be off work Friday for Good Friday. Typically we spend this weekend with family. Enjoying banquets and catching up with people who you may not have seen in a while.
In my opinion, one of my favourite parts of the Easter holiday is breakfast. Crazy, I know. But my husband and I are so busy on a typical day, work, errands, etc., that we really don’t have much time to make ourselves a special brunch and just spend time together. I make an extra special breakfast for us to enjoy, and we relax together in our sunroom enjoying it – no TV, no music, just the sound of the birds (and sometimes the rain on the roof).
Why not get your kids involved in making breakfast or brunch this year – it doesn’t have to be crazy, you can make things easy by visiting your local bakery and purchasing some biscuits or buns to make a strawberry shortcake. Grab some hot cross buns or make pancakes and sausages. Here is our favourite recipe for a make ahead breakfast casserole.
Holiday Breakfast
- Approx. 10 slices whole wheat bread
- ½ lb. bacon or ham, cooked and chopped
- ¼ lb. shredded cheddar cheese
- 6 eggs
- ¼ c. sweet onion, finely diced
- ½ tsp. Each pepper, dry mustard
- 3 c. milk (preferably 2%)
- ¼ lb. butter
- 1 c. Corn Flakes cereal crushed
Line bottom of a 9×13 pan with enough bread to cover. Add a layer of bacon or ham and a layer of cheese. Cover with a second layer of bread. Beat eggs together with pepper, dry mustard, onion, and milk. Pour over the bread. Cover and refrigerate overnight. Before cooking, cover with crushed Corn Flakes and drizzle with melted butter. Bake at 350 degrees for about 1 hour or until set. Let stand for 10 minutes before serving. Note: recipe quantities are flexible.
